European tasting menu, nine floors above Saigon

About 1,200 light rods hang around the open kitchen, rigged to catch a stream at sunset. Chef Sam Aisbett, who built his name in Sydney and Singapore, bends familiar European technique around Vietnamese and imported produce until it earns a Michelin Star, which it did in 2026.

There's an Australian and international wine pairing if you want it. This is a set menu, book-ahead night on the ninth floor of Le Méridien, not a walk-in.
