One dish, one bright orange bowl of crab noodle soup

Down an alley off Nguyen Bieu, this compact shop does effectively one thing: bánh canh cua, a crab rice noodle soup so orange it glows. It comes in a small bowl for one or a clay pot to share, the broth loaded with fish cake, crab leg meat and ribbons of egg, plus a green chilli lime sauce on the side.

Add the fried dough sticks and the tender pork trotter if you're hungry. It's a Bib Gourmand pick, seating is indoor and out, and the crowd is almost entirely local.
