Edomae nigiri, counter only
No rolls, no menu to browse. Just one chef, one counter and a fixed course built on Edomae technique: fish cured, aged or marinated before it ever touches the rice.
The rice itself is red-vinegar seasoned and served warmer than most people expect. Amane sits on Le Thanh Ton, seats fill fast so plan ahead.

Not to be missed. Best sushi experience in Vietnam...comparable to what you would find at the best spots in Tokyo. The care and precision in their technique is pure love. The ingredients could not be any fresher...10 stars...no 5 stars!

The staff here are incredibly welcoming and attentive. I ordered the 1.935++ set menu paired with the sake tasting, and the entire experience took about an hour. Every dish was wonderful, the uni and tuna were absolute standouts—and I loved how the chefs thoughtfully introduced each ingredient. For anyone with a lower alcohol tolerance like me, I highly recommend trying the Bananakobo Sake. It was perfect. Definitely a place I recommend!

We originally stopped by for a quick meal, but the experience felt much more special than I expected. The restaurant has a cozy, authentic Japanese atmosphere, and you can tell the team takes pride in what they do. The head chef was clearly passionate and knowledgeable about the ingredients, which made the experience even more enjoyable. Definitely coming back to try the dinner omakase next time.

We had a great experience here with nigiri and sake. All the tuna nigiri dishes are impressive and change our mind. The food is good that we forgot to take the picture.
