Eighteen seats, black kuro-shari rice
Every other omakase counter in the city uses white rice. Sabi Sky doesn't. Its kuro-shari is seasoned with aged black vinegar until it darkens, and it changes how the fish reads: deeper, less sharp.
The eighteen-seat counter sits above Nguyen Thi Minh Khai, and the rest of the service follows Tokyo convention closely. Reservations only.
