Ten courses of phở, one counter, fourteen seats
Peter Cường Franklin runs Ănăn a few doors down. Here he takes the dish every Vietnamese person has an opinion on and turns it into a ten-course tasting menu: molecular phở, phở tartare with sea urchin, a broth treated with the same seriousness a French kitchen gives a consommé.
Fourteen seats wrap the counter, so you watch the cooking happen at arm's length, almost like theatre. The menu runs 2,600,000 dong. Reservations only, and well ahead.

Such a unique experience in the heart of HCM. Every dish was so well thought out. Thanks to chef Peter and the lovely lovely staff who explained each dish and worked so hard . Am still dreaming about the lobster bun Rieu

Very innovative take on the classic pho: the molecular pho in once bite should not be missed. We had the warm pate (en croute) and the pot au pho (also en croute) and watched other tables enjoy the bone marrow. Cocktails were outstanding across the board — we tried a few ;) Service was friendly and approachable. Highly recommend and very well priced for the quality experience it offers.

Can't bring and open own wine. We would have paid and even would have bought additionally from their menu if needed. Manager, owner didn't seem to be that happy when we asked. Service team is very kind though. Pls note that seats are bar-chairs, so it's rather inconvenient for elderly guests.

Pho is probably the most famous Vietnamese dish, yet I always thought no chef would ever elevate it into fine dining until i was exposed to the tasting menu here. All dishes are so creative and beautiful yet stay true to their Vietnamese roots. Never imagined a taste of Pho broth can be wrapped into just one jelly bite - but Chef Peter Cuong did!! Been here 2 times within one month just for the tasting menu, and can’t wait for the next time!! 💝
