Omakase that insists it is not a sushi restaurant
Itadaki wants that distinction clear before you sit down: this is an omakase counter, not a sushi bar. Nigiri shows up, but so do grilled and simmered courses, and the chef decides the order.
The counter seats a handful, on the ground floor of the Suzu Saigon. Book ahead, and tell the kitchen about dietary restrictions before you arrive, not at the table.

Had a great omakase experience at ITADAKI Saigon! Everything was super fresh and beautifully prepared, and you can really tell they use premium ingredients. The chef was friendly and made the whole experience enjoyable. I especially loved the last dessert, which was created by the chef himself. He shared the story behind it and explained that after years of cooking for Vietnamese guests, he learned what flavors they enjoy and how to balance the sweetness to better suit the Vietnamese palate. I thought that was such a nice personal touch and a perfect way to end the meal. Great food, great service, and a really nice atmosphere. Definitely a spot I’d come back to whenever I’m in Saigon!

Food was average, service was not good like other omakase restaurants. A bit curious why chef didn’t clean my sushi plate, staff didnt clean the table if we dropped any food. Added: chef alr served another dish, putting it right next to me even tho I hadn’t finished the earlier dish yet.

Here is the translation: Amidst the heart of Saigon’s trendy Japanese restaurant scene, we discovered a small and unassuming ITADAKI. This is a place to pause after a long and busy day — a quiet corner to rest and savour something truly good. From the meticulous care in selecting ingredients, to a deep appreciation for natural flavours that guides every cooking choice, each dish is prepared in a way that honours the true essence of its ingredients. This may not be a place that offers you a novel experience, but it is one that delivers authentic value through the most genuine expression of Japanese cuisine.
