A bakery's wood oven turned over to a young team reinterpreting Viennese classics by night

Das Drittl opened on Wasagasse in August 2025, running as the evening operation of the bakery Ährlich: by day a bakery, from 5:30pm a restaurant working off the same wood oven. The kitchen belongs to a young team of four, Elie Reboul, Luca Presser, David Rotmanov, and Moritz Arthur Blank, reworking Viennese classics with a looser, more improvisational hand than the tradition usually allows.

The name, 'das Drittl,' one third, signals that this is only the first of three planned restaurants from the same group, though this Alsergrund address came first. Das Drittl is open Tuesday to Saturday, 5:30 to 11:30pm.
