A fine-dining address without the formality, where the chefs serve and explain every dish themselves

M.eins19 opened on Seilerstätte in early July 2026, after roughly two months of preparation, founded by pastry chef Julia Schmid together with Kris Kolaja and Marcus Pamer. The room seats just eighteen inside, with additional seating in a garden, and the kitchen drops classical fine-dining service. There's no separate front-of-house team; the chefs themselves bring out each dish and explain the ingredients, origin, and technique behind it.

Pricing stays comparatively fair for the format, and a changing lunch menu runs alongside the evening à la carte offering, along with monthly guest-chef events that bring in outside cooks. It's a small-scale rethink of what a fine-dining room is supposed to feel like.
