Modern Thai built almost entirely from local ingredients

The name is the concept: roughly eighty percent Thai ingredients, twenty percent from elsewhere. Inside a shophouse near Talat Noi, the kitchen builds a tasting menu around overlooked Thai produce and small local producers, often in ways you won't expect.

There's a bakery programme running alongside the savoury cooking, and the whole thing helped kick off the Charoen Krung dining revival. It holds a Michelin star.
