California's Tabu Shabu team left the state for the first time in March 2025, opening koshō on the ground floor of the Sentral building in SoBro. The room is done up like a tea house, which undersells what comes out of the kitchen.

Shabu shabu hotpots, yakitori over coals, and kosho garlic noodles, with a solid list of Japanese spirits. No line at the door, which is rare for SoBro on a weekend.
