Doc Holliday's

A Western saloon in Old Town from the Vibrant Project team

Doc Holliday's opened in Old Town in September 2025 at 2547 San Diego Avenue. Pietro Busalacchi of Vibrant Project, the group behind El Sueño, Trattoria Don Pietro and Tako Vibrant Sushi, built this one himself from concept to opening.

He'd had the name in his head for years, and had already used it on a cocktail at El Sueño. The room splits the difference between the aristocrat and the outlaw sides of Holliday: leather booths, low light, whiskey taken seriously.

We had a great dining experience in our server. TJ was awesome! He was friendly attentive and make sure we had everything we needed throughout our meal making the reservation was easy through OpenTable, which made the whole experience convenient and stress-free parking is also straightforward. There’s a parking lot available behind the restaurant and it’s through Paz parking. You just scan the barcode and pay by the hour directly from your phone between the excellent service and the convenient reservation and parking options. We had a wonderful visit and would definitely return I highly recommend it.

Some of the best food in San Diego! My wife and I had the rolled tacos and smash burger. Best burger we’ve ever had!!!! The rolled tacos with shredded chicken are superb! Service was fantastic! Chocolate shake is a REAL shake (not a mix from a machine). HIGHLY recommend.

We were playing tourists and came across this nice and cozy spot and the food was on point. Hubby got buffalo wings and a strawberry milkshake and just got some margaritas. Hubby loved the milkshakes a lot let’s say he got more than 1 . The wings were cooked and seasoned to perfection as well . We will definitely be making our way back.

I came here on Sunday with a couple of friends because we saw a FB reel featuring this new place in Old Town. First thing I noticed when we walked in is that the bar looked way smaller than in the video so I was a little bit disappointed. We got there around 12:45pm and there were a few tables and maybe 4 people sitting at the bar. Old Town was pretty busy because it was a beautiful day out but this place was not a reflection of what it was like outside. Our server was TJ and he had already got a round of drinks for my friends that got there 30 min before I did. I was tempted to go order at the bar which was 2 feet away from me but my friend said that TJ would come back so just wait....plus he said the bartender was going to tell me to wait for the server anyway. I think 20 min had passed before TJ came back and I was starving. I ordered a Cadillac Margarita and the Dirty Hash. My friends all went for the Doc's Burger. The drink was okay nothing to write home about and I think my friend felt the same with her Durango since she switched to white wine for her second drink. I enjoyed my food because it was a protein overload which is what I was looking for. Everyone thought the burger was MEH and that they've had better. Needless to say I don't think we will be coming back unfortunately unless my friends and I decide to do a pub crawl in Old Town. TJ however was a super friendly server and accommodated my friend's request for pickles and fresh french fries. She asked for fresh french fries because everyone's fries arrived cold...unfortunately even the 'fresh' fries that TJ brought were also cold. BAH! That is nothing on TJ the server though. This place was unfortunately a miss for all of us. :0(

Great dog friendly spot in the heart of old town, right on the corner of the historic park. This old school style sit down establishment offers some great cocktails and comfort foods. Our server, Mostafa, affectionately known as Mo, did a great job of taking care of my family as if we were one of his own! The only dog friendly table is the bigger one by the open window, which they were kind enough to grant to us and my two Australia shepherds along with dog water bowls, they even were able to give us two plain burger patties for them. I’d recommend their version of an old fashioned and the steak and eggs was wonderful even for dinner! Will be back soon to try their shrimp scampi and burger options.
