Dinner inside a limestone cave, West Lake

The room is built to look like a limestone cave, kitchen open to the floor, and that alone makes Terra Mare worth the trip. Chef Olivier Genique runs a tasting menu that's mostly Mediterranean with Asian turns, and the Atlantic turbot under lemongrass and citrus sauce is the dish everyone talks about.

Stick around for the petits fours: house-made chocolates infused with lemongrass. It's one of the boldest openings West Lake has seen in years.

Terra Mare is not just about luxury; it’s about detail. From the plating to the temperature of each dish, everything felt deliberate. Chef Olivier Génique’s approach to combining Mediterranean cuisine with subtle Asian influences creates a unique dining experience in Hanoi. It’s a place for people who appreciate nuance, patience, and a well-paced evening of thoughtful cooking.

Terra Mare is a modern Mediterranean restaurant led by French chef Olivier, who has spent many years working in Hanoi. His deep understanding of Hanoian clientele is clearly reflected in the menu, where refined French techniques are thoughtfully balanced with local tastes. The fish dishes stand out in particular—fresh, delicately cooked, and true to the essence of original French cuisine. A sophisticated yet approachable dining experience. Top food quality if you like to see real pieces of work come by and enjoy.

Each dish tastes wonderful and the whole course is quite full. I really like the concept of Earth (Terra) and Sea (Mare) in the dishes and decoration though it was leaning more sea. We sat on the second floor so it was quiet and easy to talk. My mother thinks the ordering of the dishes feels unconnected like the light pumpkin soup towards the end. She would prefer no bones in the pigeon. The foie gras macaroon with jam tasted a little too sweet for a starter. I’m a fan of breads but eating two maybe a little too full. The service is attentive but my mother thought they can be more warm and welcoming when the guests are coming in or leaving. My mother also commented on the outside doesn’t match the inside. When we came, we entered an empty yard and it took seconds to notice a staircase to the main door. Maybe close the big door so the guests always go through the small door straight to the staircase. Overall it was still an enjoyable experience. The restaurant is still relatively new so I know you guys can still grow a lot.

The initial impression was great. However, later on we found a foreign object in the dish and needed a replacement, and the wine glass also had to be changed as it was not clean. Regarding the wine pairing, it didn’t feel particularly well balanced with the food, and overall the dishes were slightly too rich and heavy for our taste. The main course, pigeon, had a noticeable odor, so we were barely able to eat it. It would be better if the wine pairing were designed to complement the dishes more closely. Compared to other fine-dining restaurants in Korea or Vietnam, there were quite a few aspects that felt disappointing for the price. Having two bread courses felt redundant and took away from the overall experience.

Terra Mare is a hidden fine dining gem in Hanoi,Chef Olivier Génique Is inviting us in ocean of flavor with a refined 12-course tasting menu crafted with precision and imagination. Each dish invites an active tasting—textures, sauces, and sequences designed to be explored rather than imposed. When you align with the chef’s intent, the experience unfolds seamlessly. The decor evokes a deep-sea exploration, as if descending into a Jules Verne–like underwater world, anchored by a striking octopus-tentacle bar. A singular address for true food professionals and serious lovers of contemporary seafood cuisine. A absolute must try in Hanoï.
