Italian technique, Middle Eastern spice, live fire
Chef Ito spent seven years cooking in the Middle East before coming home to Taiwan and pairing up with an Italian chef. Cava Fuoco is where those two halves meet, Italian technique carrying spice work you rarely taste in this city, all off the same fire.
The feature wall was designed by a team from the National Palace Museum. It's a la carte, minimum NT$1,500 plus service per person, on Yongming Street in Lingya. Book ahead, the room is small.

The food, service, and ambiance were all good, so I'd give it five stars. However, I was a bit surprised by the minimum charge of NT$90 for water! For someone like me who wants a beverage or alcohol, drinking water would make my stomach too full. I wouldn't mind ordering a beverage (or alcohol) as part of the minimum charge, especially since the food already has a minimum charge of NT$1500. But the mandatory NT$90 water charge per person (regardless of whether you drink water or not) seems unreasonable. Could this be flexible and be replaced with a beverage or alcohol charge?

This Italian restaurant is of a high standard, blending Middle Eastern spices with Italian cuisine. They primarily use local Taiwanese ingredients, and their fish dishes are particularly amazing! The fish is cooked to perfection, with a delicate and tender texture. The accompanying sauces and side dishes are also layered and don't overpower the natural flavors of the fish. The restaurant has a dedicated refrigerator for aging fish and a wood-fired oven. The kitchen is semi-open, and this time we sat at the bar to fully enjoy the entire cooking process. Overall, the dishes are delicately seasoned, beautifully presented, and the dining environment and service are very comfortable. It's a restaurant worth visiting again.

In a quiet alley, there's a cave with an exotic atmosphere. Stepping inside, the air is filled with the rich aroma of Middle Eastern spices. We randomly ordered some food and were surprised to find that every dish had a unique flavor. It was inexplicably delicious. Appetizers, main courses, staples, desserts… I wanted to try them all! But my stomach couldn't keep up, so I'll have to wait until next time!

The chef uses direct-fire cooking to showcase the original charm of the ingredients, releasing an irresistible aroma after searing, which, combined with the layered sweetness and flavor of the cooked fish, creates an unforgettable experience. Each dish demonstrates a precise mastery of the ingredients and the cooking time. The most stunning dish is undoubtedly the specialty dessert made with rice noodles and coconut milk. Its delicate texture and rich aroma create an unforgettable culinary experience that blends tradition and creativity.

Very unique! 👍🏻 The appetizers were delicious! The risotto was also excellent! The main courses, beef and lamb, had a very Middle Eastern spice and seasoning flavor 😆 It depends on personal taste. My elders were very satisfied with the unique flavors. The staff were very friendly 💯 and the service was excellent. The chef even came over at the end to ask about the food's taste, very approachable ☺️
