Belén
Chiang Mai Opened July 2025
An 18-seat tasting menu from a six-Michelin-star chef, inside Chiang Mai's InterContinental
Ten seats face the open kitchen at a counter built for watching, not just eating. Belén pairs European technique with Japanese touches across a 14-course menu, run day to day by executive chef Matteo Santalucia under Paulo Airaudo, whose other restaurants carry six Michelin stars combined.
About 80 percent of the ingredients come from farms, forests and fields across Northern Thailand rather than imported stock. It's the most ambitious fine-dining opening Chiang Mai has seen in years, served Thursday through Monday with an optional wine pairing.
