Kashgar Uyghur Dining

Hand-pulled lagman and lamb shashlik on Pulaski
Uyghur cooking sits between Central Asia and northwestern China. Kashgar opened on North Pulaski Road in July 2026, one of the few places in Chicago serving it. The room is casual and counter-adjacent, built for noodles rather than lingering.
Fried lagman is the anchor dish, beef manti and lamb shashlik sit alongside it. Albany Park already had a dense stretch of Middle Eastern and Korean kitchens. Uyghur food wasn't part of that stretch until now.

Big Plate Chicken (Da Pan Ji): A massive, shareable portion featuring fresh, never-frozen chicken that is incredibly tender and juicy. We ordered the large size for a group of 5–6 people, and it came with two complimentary portions of noodles, with options to add extra. It is a hearty crowd-pleaser! Special Lagman: A signature dish consisting of a bowl of hand-pulled noodles paired with a separate bowl of savory, stir-fried meat and vegetable toppings. The chew and texture of the handmade noodles are phenomenal—even better than the flat noodles served with the Big Plate Chicken. Uyghur Manta: Massive, palm-sized steamed dumplings packed with minced meat and rich, savory broth. One bite feels just like eating a giant, flavorful soup dumpling! Samsa (Baked Buns): Available to order individually. These feature a paper-thin, crispy pastry crust filled with a delicious, fragrant mixture of onion and beef. The crust is brushed with milk before baking, giving it a subtle, delightful milky aroma. Lamb Rib Kebab & Lamb Shish Kebab: While both are fantastic, the Lamb Rib Kebab is a standout favorite. The rib cuts feature just the right amount of fat, rendering an incredible, melt-in-your-mouth richness. The Shish Kebab is also expertly grilled—cooked to absolute perfection so that the meat is tender and fully done without a trace of bloodiness. Traditional Milk Tea: Real, authentic milk tea made from pure milk and brewed tea leaves—completely free of artificial powdered creamers. It offers a wonderful, soothing balance of rich milk flavor and a lingering tea aftertaste. Honey Cake: Highly recommended! It is soft, chewy without sticking to your teeth, and features a rich brown sugar flavor that isn't overly sweet. Marshmallow Cake: A dream for sweet lovers! Super rich texture filled with hidden layers of fruit and nuts, topped with a wonderfully toasted, soft, and sweet marshmallow exterior. Convenience: Located in a plaza with plenty of easy parking and abundant seating. Service: The staff is exceptionally warm and welcoming. One of the servers (originally from Xinjiang) was super nice and made the experience even more pleasant.

Came on a Sunday night and the restaurant was packed, which is always a good sign. Service was super warm and friendly, food came out fast and everything was excellent. Haven’t had plov this good since travelling in Kyrgyzstan, and the hand-pulled noodles and traditional bread are so good. Highly recommend the saffron tea, too. We will be back!

Kashgar Uyghur Restaurant is a great place to visit when you’re really hungry and craving flavorful, filling food. You definitely have to try the Special Lagman—it was delicious and very satisfying. The plov was also good, and the meat was incredibly soft and tender. The Uyghur manty was tasty as well, although I think it could be even better. Overall, it’s a nice place to enjoy authentic Uyghur food, and everything is halal. I would definitely recommend giving it a try!

Came back twice in four days. That’s how good and authentic the food is. Totally worth the drive from downtown.
