A Tuscan pop-up finally lands white tablecloths downtown.

Da Prato ran as a pop-up for months before taking a permanent room on West 2nd Street in July 2026. The chef came from Etrusca in New York, and the format is deliberately old-school: white tablecloths, a long Italian wine list, table service.

The cooking bends traditional Tuscan dishes rather than reproducing them: chicken liver pâté finished with marsala, spaghetti with olives and rockfish, grilled rabbit. Few restaurants downtown even attempt that register.
